Lunchbox of the day : Thermomix Claypot Chicken Rice

Experimented and modified to my own version of thermomix claypot chicken rice. The outcome was very good, but probably just lacking the burnt (chau-huey-ta) effect but this version is good as it is less heaty to the body. It is very easy to prepare.

So this is how thelazypainter prepares claypot rice thermomix style without the claypot :

Ingredients : 
2 thermomix cups of rice
200g chicken meat
540g water
Ginger, garlic, dried shrimps, pepper powder
Mushrooms
Cut pumpkins
Chinese sausage
Spring onion
Sesame oil, dark soy sauce, light soysauce
 Method: 

1. Marinate chicken with ginger, garlic, dark and light soy sauce, pepper, sesame oil before hand.

2. Rinse rice in rice basket. Cut pumpkin to cubes, chinese sausages and mushrooms to thin slices, spring onions, and prepare some dried shrimps (soaked and cleaned). 

 2. Fill in 540g water in thermomix jug, water level touching the top circle part of knife )
3. Put rice basket in thermo jug. Put marinated chicken onto the rice basket and mix it, followed by pumpkins, mushrooms and Chinese sausage.


 5. Close lid and set to 25 minutes, varoma, speed 2.

6. When beep sound is heard, time is up. Open lid and breath in the aroma. Almost ready..

7.Scoop the toppings aside on a plate. We will have to scoop the rice out first. The rice is nicely cooked.

7. Garnish with sesame oil and Kuching pepper.

8. Ready to be served and packed for lunch. 

It is very delicious and Chunkeat likes it a lot.

Juicing : Watermelon and Apple Juice

It was a stressful day but i come home to a good power jar of thermomix juice.
Juicing had never been so fun and fulfilling.

Ingredients : 
1/2 portion of small watermelon, cut into pieces
3 apples, decored and cut into pieces.
Ice cubes 

Method :
1. Prepare all ingredient. Watermelon cut into pieces. Apples de-cored and cut into pieces. See photo below.

2. Put all fruits into thermo jug.

3. Add in ice cubes. I added 1 whole tray of ice.

4.Close the lid. Turn the knob to speed 10 for 30-45 seconds. The sound is loud because the ice are being crushed but dont freak out... Juice is coming your way ok..

5. Open the lid, juice is done, you will see some cold mist coming out like smoke. Thats the coldness of ice but the juice tasted so refreshing.

6. Ready to be serve. Just so delicious. Perfect for chilling out at night.

Lunchbox of the day : Steamed lady fingers & baby corns with anchovies and Steamed batang fish meat

Today i prepared lunch box for myself and my husband. Very simple but healthy lunchbox (Steamed lady fingers & baby corns with anchovies and Steamed batang fish meat with white rice).

Ingredient : baby corn, lady fingers, ginger, garlic, goji berries, soy sauce, cooking wine, batang fish meat, chilli, sesame oil, pepper

1. Rinse rice in rice basket. Put baby corn into rice basket. 
2. Prepare fish ingredients. Mix cut ginger, garlic, goji berries, soy sauce, cooking wine, pepper and sesame oil to batang fish meat in a metal plate. Place metal plate with above onto thermomix cooking tray. 
3. Put to cook, 20 minutes, varoma, speed 2.
4. When time is left 6 minutes, put lady fingers and anchovies to steam until beep sound is heard.
5. Ready to be served and packed into lunch boxes.




Lunch on a day off : Chinese style steam chicken with cooking wine & Steamed spinach with baby corn shoots, tomatoes and anchovies

Preparation time : 10-15 minutes
Cooking time : 20 minutes

1. Rinse rice and baby corn in rice basket.
2. Prepare ingredient for chicken dish. (mushrooms, chilli, ginger, garlic, soy sauce, cooking wine, pepper) Mix properly in a metal bowl.
3. Put rice and chicken to cook. Varoma, speed 2, 20 minutes.
4. When time is left to about 6 minutes, put spinach, tomatoes and anchovies to steam on varoma tray.
5. When you hear beep sound, time is up. Unveil the dishes and they are ready to be served.

Easy, simple and healthy!

Dessert : Thermomix Azuki Red Bean Soup

Yesterday was Deepavali and i was really bored at home, so i decided to experiment with cooking Azuki Red Bean Soup. Conventionally, cooking red bean soup in slow cooker requires long duration (eg 4 hours)  Thankfully, with thermomix, cooking red bean soup is easy and time needed is much shorter. Due to the ad-hoc decision of making the soup, i did not use full ingredient to prepare the soup. Missing ingredients are : longan, lotus seed, orange peel, sago.

My version was purely red bean but it tasted great afterall.

1. First, we have red bean in hand. 
2. For two person, i used 1.5 bowl of red beans and soaked them in water for 4 hours. (disclaimer : this is to help to reduce bloating, but i am not sure.)

3. Fill in750-800 g water in thermo jug. Put water to boil for 6 minutes, 100 degrees, Speed 2.

3. Add in red beans in thermo jug. Close the lid and put to boil and cook it again for 45-60 minutes, 100 degrees, speed 2.

4. After you hear the beep sound, time is up, open the lid, add in sugar to preference. Close the lid, turn speed knob from 1-10. By then, the red bean blends well with sugar. 

5. Pour red beans to two small bowls. Total servings is 4 small bowls. Add in fresh milk/coconut milk to preference. 


6. Ready to be served. 



Next attempt, i shall add orange peel to boil to enhance the aroma, sago to make the soup thicker and lotus seed and longan to make it complete!

Lunchbox of the day- mushroom chicken, steamed vege & eggs with rice

This morning I prepare lunchbox of the day. It is very simple and easy. 
Preparation time : 25--30 minutes.
Tips : best to prepare ginger, garlic, have vege washed and cut the night before. 

1. Rinse 1 -1.5 thermomix cup of rice in the rice basket. If you like steamed carrot, put some carrot cube on top of the rice.

2. Fill in some water in thermomix jug to the surface of the knife.

3. Wash two pieces of chicken thigh and place it on a metal bowl. Add in mushroom slices, ginger, garlic. Add little bit of sesame oil and few caps of soy sauce. Sprinkle some Kuching pepper.

4. Place rice basket. Close the lid till you hear a beep sound. Place chicken on top on thermo tray as per in the photo. Cover tray. Set 20-30 mins, varoma, speed 2 or 3. 


4. Standby vege on the thinner thermo tray and eggs (if you want some eggs).  


5.Place eggs into the thermo jug like this when 6 minutes is left. Can adjust the time if u missed it.

6. Place vege on thermo thin tray like this for steaming. Or alternatively, you can put vege just beside the bowl with chicken without using this thin thermo tray. So you don't need to wash too many things. For leafy vege 5-6 minutes is just nice, brocolli need more time.


Basically thermomix functions like the sketch below : -


7. While waiting vege to steam, prepare some sauce for vege. Mix some olive oil/sesame oil, soy sauce/oyster sauce, and pepper in a bowl.

8. When you hear the beep sound, time is up. Open up the lid and the rice and eggs are ready. Rice nicely cooked.

9. And the chicken thigh too.. Ready..

10. And of course the vege are ready too..put the vege in the bowl with the sauce prepared just now.

11. Vege is done.. Super easy and taste fresh too.

12. Pack everything in lunchbox and you are ready to GO! I like the egg yolk being not too dry. To achieve this, steam eggs when varoma 100 degree for 6 minutes. If you prefer harder and dryer yolk (hard boil egg), put egg on top of the rice from the start. Happy trying ya!
